Thai Red Curry Soup Recipe

Chicken Thai Red Curry

Ingredients

  • 1 tablespoon Olive Oil
  • Fish Sauce
  • 1 liter Water
  • Chicken Stock Pots
  • 1 Tin of Sweet Corn
  • 1 Green Bell Pepper
  • 1 Red Bell Pepper
  • 1 Tin of Coconut Milk
  • 10 10 Mushrooms, diced
  • 1 Large Potato, diced
  • 500 Beef or Chicken, diced
  • 1 Red Chilli, diced
  • 3 tablespoons Red Curry Paste
  • 1 tablespoon Ginger Paste or Fresh
  • 4 Cloves of Garlic, crushed
  • 1 Red Onion, diced
  • 1 tablespoon Olive Oil
  • 1 package Rice or Noodles
  • 1 Lime Juice

Instructions

  1. In a large saucepan warm the Olive Oil
  2. Once warm add the Onions, Garlic & Ginger cook until soften
  3. Once soften add the Red Curry Paste and cook for an another minutes or so
  4. Add the Beef or Chicken and cook until browned
  5. Add all the other ingredients apart from the Rice or Noodles and cook for 30 minutes
  6. Add Rice or Noodles to Soup and serve.
  7. Cook the Rice or Noodles as instructed
