
Weather like this is perfect for Soup, I love a good hearty Soup and my Jamaican Spicy Chicken & Butternut Squash Soup is hearty flavoursome and damn right delicious.
This is a staple in my house when it’s cold outside and I want something warm and filling I always go for this soup it’s so homely. I love the fact that you can play around with it, I love to add different vegs to it and every time it comes out great.

When it comes to making soup I tend to use the pressure cooker as it makes life a lot easier, I just brown the chicken in the pressure cooker just don’t add the lid and brown off the meat it works a dream and less cleaning up to do after. Then throw everything else in.
I know some of you are going to see Scotch Bonnet Pepper and be like no way am I going to try this recipe it will be way too hot, but because the Scotch Bonnet is not cut and is only placed on top of the soup while it cooks it gives it a gentle warmth.

- 1 Litre Water
- 6 Chicken Thighs & Legs Skinned
- 2 Chicken Stock Cube
- 1/2 Small Pumpkin or Butternut Squash diced
- 2 Carrots, diced
- 3 Celery Stalks diced
- 3 Sweet Potato, diced
- 1 Red Bell Pepper, diced
- 1 Green Bell Pepper, diced
- 1 Large Onion, diced
- 1 Tb Salt
- 1 Tb Black Pepper
- 1 Tin of Sweet Corn
- 1 Spring of Thyme
- 1 Scotch Bonnet
- 1 Packet of Noodles or 1 cup Cooked Rice
- Handful of Sugar Snap
- Handful of Baby Corn
- 1 Tb Oil
Instructions
- Set Pressure Cooker on to meat setting
- Add the oil and allow to warm
- Add the Chicken and brown
- Add all the Ingredients apart from the Noodles/Rice, Sugar Snap & Baby Corn
- Make sure to place the Scotch Bonnet on the top so it's easily found
- Cook in pressure cooker from 20 mins
- Remove a cup of the soup as well as the Scotch Bonnet & Thyme
- Place the cup on soup in a blender and blend
- If you want your soup on the spicy side add the Scotch Bonnet to the blender
- If not disregard with the Thyme
- Add back the blended Soup and Noodles/Rice, Sugar Snap & Baby Corn and cook for another 5 mins
- Stir one last time
- Enjoy your Soup
