Tasty Tuesday: Oat Bran Pancakes
So after months of my diet being all over the place and me having good days followed by BAD days I’ve decided to jump back on the carb cycling.
I really don’t know why I stopped doing it in the first place, it works for me I get good results and I tend to be happy with my body.
Yesterday was my first day back and it was a low carb day.
Which can be hard at times as I’m trying to keep under 50g.
Today is a high carb day with only clean carbs.
On low carb days I only workout in the morning and skip the evening gym session which gives me time to meal prep for the following day.
Last night I got all my food ready for today.
As I do HIITs first thing I like to have a hearty breakfast on high carb days and today was no exception.
I decided on Oatbran Pancakes, I have a recipe which I always use but last night I was missing some of the ingredients, so I decided to improvise.
On a high carb day, I always meal prep the day before
The recipe is so simple
- 2 T Oat Bran
- 1 T Linseed
- 1 T Dessicated Coconut
- 1/2 T Chia Seeds
- 1 T Chopped Nuts
- 2 Prunes
- 2 T Greek Yoghurt
- 1 Egg
- Combine all Ingredients in a food processor
- While blending the batter, warm up one teaspoon of coconut oil in a frying pan
- Once hot make mini Pancakes by pouring 2 tablespoons of batter into the hot frying pan
- Wait to see bubbles appear and tune over cook on both said for no long than a minute each side.
- Should make 4 Pancakes
These are so simple to make and are just as good the next day reheated, these pancakes are not light and fluffy. I always topped them with a few spoons of yoghurt and some berries.
