At the beginning of this year, I made a promise to myself that I would cook or bake more. The plan was to eat more fresh. By making 75% of my food I would know what I was putting into my body. So far I’ve been keeping to this, and I’m loving every minute of it. Don’t get me wrong there are days when I just don’t want to cook but most of the time I really enjoy it.
I’ve managed to prepare three meals each week with one of them being from the simple cook box, and then I try to make something new I always make sure that cook in bulk so that I can freeze it or have it the next day, that way I don’t have to cook every night.
I think I’ve done pretty well so far as only one meal has been a letdown and that was from my Simply Cook box but to get honest I just might of been me gave a off day.
Most weekends I bake, most of the time it will be some kind of cupcakes as I live making cupcakes as they are just easy, but every now and then I was do something a little different this weekend I was quite busy as I made cupcakes for a few friends as bday presents and also decided I would give something new a go.
These were screaming out to me to be made. I love Peanut Butter who doesn’t! Plus these cookies only required 3 ingredient which is a win win in my eyes. I love anything which takes the minimum effect sometimes you just want an easy life and this was one of them times where I wanted to make something quick and easy.
These were so easy to make. I did use I Chucky Peanut Butter as that is my favourite 😋.
These may not be the most beautiful looking cookies, but I do promise they were delicious 🤤 they were crunchy, crumbly but soft and oh so peanut buttery just plain tasty hope you enjoy them as much as I did.
- 250g Crunchy Peanut Butter
- 100g Granulated Sugar
- 1 large Egg
- In a mixer combined together the peanut butter, sugar and the egg.
- Form the dough into 1 tablespoon sized balls and place them 2 inches apart on a baking sheet.
- Press them down with a fork to make a crosshatch pattern.
- Bake for 12 minutes on gas mark 4.
- Let the cookies cool on the baking sheet for 10 minutes before moving them to a wire rack. Store in an airtight container for up to 5 days.
